In Venezuela, the arepa remains one of the most enduring culinary traditions and a symbol of national cuisine. It is a dish made from corn dough in the form of round flatbreads, which are cooked on a flat surface and then often sliced open and filled with various fillings.

Origins of the dish

As Cyprus Mail reports, the roots of the arepa date back to the pre-Columbian era. Indigenous peoples of northern South America grew and processed corn as a staple food. Archaeological and linguistic evidence indicates that early versions of arepa were made from ground corn: the dough was shaped into round flatbreads and cooked on heated stone surfaces known as budares.

After European colonization began, the dish changed but did not disappear from the local diet. New fillings were gradually added, and other cooking methods were used. At the same time, the basic principle remained unchanged: corn dough is formed into discs and cooked on a flat surface. This continuity is one reason why arepa is called a living pre-Hispanic dish that is still widely consumed in Venezuela.

Fillings and regional varieties

Modern arepa can be breakfast, lunch, or dinner. It is also used as a kind of plate or casing for fillings. Arepas are filled with cheese, shredded beef, black beans, avocado, or eggs. The dish is common both in home kitchens and at roadside areperas, where numerous varieties are prepared.

Different regions of Venezuela have their own versions of the dish. In coastal areas, seafood may be used as a filling, while in the Andes, wheat flatbreads known as arepas de trigo are prepared. For Venezuelans living abroad, arepa is also a connection to home, as it can be adapted to locally available ingredients while preserving the character of the dish.
