Vegetable prices changed dramatically in late August
At the end of August, vegetable prices in Ukraine changed significantly. Cucumbers saw the sharpest drop in price—by nearly 60%—while potatoes, onions, carrots, and tomatoes at the “Stolichny” market remained roughly at the same level.
As of August 28, 2026, vegetable prices in Ukraine are fluctuating. Some seasonal produce is becoming cheaper due to increased supply, while other vegetables, on the contrary, are beginning to rise in price. According to data from Kyiv’s “Stolichny” market, a kilogram of potatoes currently costs 11–13 UAH. The price has not changed compared to the previous period.
Onions are selling for 13–15 UAH/kg, and carrots for 12–15 UAH/kg. Prices for both vegetables have also remained unchanged. Young cabbage has become slightly cheaper. It currently costs 38–43 UAH per kilogram, which is approximately 6.98% less than before. Tomatoes at the market cost about 25–35 UAH/kg. Their price has not changed recently.
Cucumbers have become nearly 60% cheaper
The most noticeable change has been in the price of cucumbers. According to market data, their price has dropped by 60.47% at once. A kilogram of cucumbers is currently selling for approximately 45–50 UAH. This decline is due to a seasonal increase in the supply of vegetables. Among other popular seasonal vegetables, zucchini costs 33–37 UAH/kg.
Eggplants, on the other hand, have risen in price by nearly 9%. They are now selling for approximately 35–40 UAH per kilogram. Corn has also become more expensive. Its price rose by 14.29% and is now around 7–9 UAH/kg. Prices for sweet peppers, cauliflower, zucchini, and garlic remained largely unchanged.
How Much Do the Vegetables for Borscht Cost?
When it comes specifically to the main vegetables for a borscht mix, potatoes, carrots, and beets remain the cheapest right now. Potatoes cost 11–13 UAH/kg, carrots — 12–15 UAH/kg, and beets — about 11 UAH/kg.
Onions are selling for 13–15 UAH/kg, and young cabbage for 38–43 UAH/kg. Tomatoes cost 25–35 UAH/kg. In other words, the cost of the vegetable basket is currently most heavily influenced by seasonal produce, whose prices can fluctuate rapidly depending on harvest volumes and market supply.
What Will Happen to Prices in the Fall
As for potatoes, experts do not expect a shortage during the harvest. On the contrary, there may be a plentiful supply on the market in September and the first half of October. This could keep prices from rising. Later, the situation may change. Some farms that lack specialized storage facilities will gradually sell off their stockpiles. Additionally, part of the harvest may spoil during storage.
As a result, toward the end of fall and into winter, potato prices may vary depending on where they were stored. Potatoes from professional storage facilities may cost more than those sold immediately after harvest. Other vegetables will also be affected by the weather. If the fall is warm and dry, there may be more field-grown cucumbers and tomatoes on the market. In that case, prices may come under additional pressure.
If, on the other hand, temperatures drop sharply, the supply of seasonal vegetables will decrease. This, in turn, could lead to another price increase. For now, the main change at the end of August is a sharp drop in cucumber prices. At the same time, the prices of vegetables used in borscht remain relatively stable, and the future market situation will depend primarily on the harvest, weather, and production volumes. This is evidenced by data from the “Stolichny” market website in Kyiv.
In Ukraine, prices for vegetables used in borscht continue to fall thanks to the arrival of the new harvest. No shortages of key vegetables are expected in late August or September.
