Lidl Food Academy in Cyprus offers three dessert recipes — Cyprus Mail
In Nicosia, Cyprus, Lidl Food Academy presented a selection of three desserts: mochi with sweet bean paste, a tart with baked apricots, and ice cream made with coconut milk, banana and mango. The academy’s recipes were published by Cyprus Mail.
Mochi with red bean paste
For the mochi, the recipe suggests using 100 grams of mochiko glutinous rice flour, 260 ml of cold water, 50 grams of sugar, a pinch of salt, food colouring if desired, corn starch, and 250–300 grams of sweet red bean paste. The paste should be shaped into 10–12 balls of about 25 grams each and chilled.
The flour, water, sugar, salt and colouring are mixed in a microwave-safe dish until smooth. Covered with cling film, the mixture is cooked at 800 W for one minute at a time, stirring after each interval. The total cooking time is four to five minutes. The hot dough is divided into portions, wrapped around the chilled paste balls and dusted with starch.

Apricot tart with cheese cream
The tart base is made from 250 grams of flour, 115 grams of cold butter, honey and milk. The dough is baked at 170 degrees for 30 minutes. The filling uses cottage cheese, cream cheese, thyme honey and lemon zest.
The apricots are cut into wedges, mixed with olive oil and baked at 170 degrees for 20 minutes. The juice released during baking is reserved for the glaze. The cooled base is covered with cheese cream, decorated with apricots and brushed with warmed apricot jam mixed with the fruit juice.
Coconut and tropical fruit ice cream
The third recipe consists of 100 grams of canned coconut milk, 50 grams of brown sugar, xanthan gum and 300 grams of frozen bananas, mango and papaya. The ingredients are blended in a powerful blender until creamy. The finished dessert is recommended to be served immediately, with toasted coconut flakes added.
