South Africa publishes spaghetti and meatballs recipe — Daily Maverick
South African publication Daily Maverick has published a recipe for spaghetti with meatballs and a simple Italian sugo al pomodoro tomato sauce. The article’s author, Tony Jackman, suggests making four servings using ready-made or homemade meatballs, canned tomatoes, garlic, basil and spaghetti.
Tomato sauce with basil
For the sugo al pomodoro, the author lists four tablespoons of extra virgin olive oil, four cloves of garlic, 800 grams of chopped Italian tomatoes or San Marzano tomatoes, salt and a handful of fresh basil. Chopped garlic should be added to a cold heavy pan with olive oil and heated slowly for about two minutes, without allowing the oil to boil.
The tomatoes and salt are then added to the garlic. The sauce should be brought to a gentle simmer and cooked over moderately low heat for 30 minutes to develop its flavour. At the end, fresh basil leaves torn by hand into small pieces are added.

Pasta and meatballs
The dish requires 250 grams of spaghetti cooked al dente. After draining, the pasta is suggested to be lightly drizzled with olive oil and tossed.
Separately, about 500 grams of small meatballs should be fried in three to four tablespoons of olive oil, seasoned with salt and black pepper. They should be turned frequently and cooked over moderate heat for about 15 minutes, until golden on all sides. Dried Italian herbs are added at the end.
For serving, spaghetti, tomato sauce and meatballs are placed on a plate. If desired, the dish is topped with finely grated Parmesan and garnished with basil. Jackman links the recipe to a scene from Disney’s 1955 animated film “Lady and the Tramp,” in which the characters eat spaghetti with meatballs at Tony’s restaurant to the song “Bella Notte.”
