Potatoes and other vegetables used in borscht are becoming more expensive in Ukraine

Wholesale potato prices in Ukraine have risen by 50% over the past week due to the gradual depletion of last year’s harvest

Old potatoes are currently selling for 12–16 UAH/kg, compared to 8–12 UAH/kg a week earlier. 

At the same time, the domestic market has seen a significant price increase for almost all other items in the traditional borscht mix.

The cost of the remaining vegetables from last year’s borscht assortment also increased during the reporting period. In particular, carrots rose in price from 20–28 to 26–30 UAH/kg, and beets from 8–9 to 10–11 UAH/kg. 

A similar trend affected other ingredients: onions rose in price from 8–10 to 11–13 UAH/kg, and white cabbage from 22–25 to 23–25 UAH/kg.

Early vegetables for borscht are also becoming more expensive, driven by high demand and the onset of seasonal supply fluctuations. Young beets have risen in price from 25–35 to 33–35 UAH/kg, and young cabbage from 15–18 to 17–29 UAH/kg. 

Only for new potatoes has the price range narrowed downward—from 50–90 to 50–80 UAH/kg.

Seasonal vegetables, on the other hand, are becoming cheaper due to increased supply from local greenhouse farms and open-field farms. 

Tomatoes are now selling for 90–135 UAH/kg instead of 100–155 UAH/kg, and sweet peppers for 130–170 UAH/kg versus 155–170 UAH/kg. 

The price range for cucumbers has widened from 40–62 to 35–65 UAH/kg, while prices for green peas have more than halved: they are now trading at 70-90 UAH/kg compared to 150-200 UAH/kg a week earlier.
