Dwaeji-galbi pork ribs recipe with apple marinade — Korea Herald
In South Korea, The Korea Herald published a recipe for dwaeji-galbi — marinated pork ribs grilled and served with a lettuce salad. The dish is common at Korean barbecue restaurants and family gatherings. It is also described as a more affordable alternative to sogalbi, beef ribs.
Apple and onion marinade
The recipe requires 1 kg of bone-in pork ribs. Before marinating, it is recommended to trim the fat from the meat, soak the ribs in cold water for 30 minutes to remove blood, and then drain the water.
The marinade is made with one-third of an apple, half an onion, five tablespoons of soy sauce, one tablespoon of sugar, one tablespoon of minced garlic, two tablespoons of sesame oil, and ground black pepper. The apple and onion are chopped, mixed with the other ingredients, the ribs are covered with the marinade, and the meat is left for one hour.

Grilling and serving
Traditionally, the ribs are cooked over charcoal, which gives the caramelized edges a smoky flavor. At home, they can be fried on a grill pan or cooked under the oven grill. The grill should be heated to medium-high temperature, and the ribs should be grilled for 15 minutes on each side.
The dish is served with a salad made from 90 g of lettuce. The dressing uses one tablespoon each of soy sauce and white vinegar, half a tablespoon of sugar, and half a teaspoon of hot Korean gochugaru pepper. If pork ribs are unavailable, they can be replaced with pork loin or meat from the front leg.
