In Estonia, farmer grows artichokes after eight years of experiments — ERR News
In Lääne County, Estonia, Artifarm owner Andreas Kiik grows artichokes, having adapted the Mediterranean crop to the local climate. This summer, in his assessment, was particularly favorable for the plants. Artichokes grow well with sufficient moisture and moderate temperatures.
Eight years of searching
As ERR News reports, Kiik got the idea to grow artichokes in Estonia after a trip to Italy. His first attempts were mostly unsuccessful, but after eight years of testing different varieties and cultivation methods, the farmer managed to achieve results.
Kiik expects artichoke cultivation to start generating income. According to him, it would be good this year to at least cover the growing costs, while the next season may be better.

Using the entire plant
The edible tender heart makes up approximately 30–40% of an artichoke, but the farm also uses other parts of the plant. A paste has already been made there from the outer leaves; they can also be used to make an alcoholic drink or tea. The stems, according to the farmer, can be pickled just like cucumbers.
The main buyers of Artifarm artichokes are currently restaurants and small food establishments. Artichokes are also bought by people for their own consumption, and there are regular customers among those placing orders.
