Chivito Is One of the Symbols of Uruguayan Cuisine

Chivito is one of Uruguay’s best-known sandwiches and holds a special place in the country’s cultural identity. The dish is believed to have been created in the 1940s in Punta del Este, when a visitor asked for a beef sandwich and received a hearty combination of ingredients. It later quickly became popular across the country.

Beef instead of goat meat

The name chivito means “little goat,” but the dish contains no goat meat. Its typical ingredients include beef steak, ham, cheese, lettuce, tomato, and mayonnaise. Some versions also include bacon or a fried egg.

As Cyprus Mail reports, the development of chivito reflects a combination of local tastes, substantial beef production, and European culinary influences brought by immigrants. The dish is associated with casual eateries, late dinners, and friendly gatherings.

Variations of the dish

Chivito spread from the coast to Montevideo and other cities in Uruguay, becoming a common menu item. There is also a chivito al plato variation: it is served not as a sandwich but on a plate with French fries, salad, and other accompaniments.

Modern versions of the dish may include olives, peppers, or different types of cheese while retaining its basic structure. In Uruguayan diaspora communities, chivito is prepared as a reminder of home, using available local products. In cities, the sandwich is often sold in small eateries and grill bars, while in coastal areas it retains a connection to its origins.
